Back in the Blogging Sphere
After a 4 month break I am back
I have hardly read anyone else’s blogs, much less written anything on mine. The reason? Furlough
I decided I needed to spend time with people face to face and I didn’t make writing and reading on blogs a very high priority during that time:) We also traveled for the whole month of June through Arkansas, Tennessee, Louisiana, and Tennessee and I took a cellular biology course the beginning of July to mid-August in Washington. All of these were reasons to wait until we returned to Togo (and had working internet in our home) to return to the blog world.
We are so thankful to be back in our house in Togo. However, furlough was a great break from daily life here and I loved seeing friends and family we hadn’t seen for years. We were also blessed with NEW friends. A surprising gift! AND we found out two important things that have significantly impacted our life. First, we discovered that Caleb has a gluten allergy. This has meant a change in diet and my cooking for our entire family. It seems simplest to me to keep gluten out of our house as much as possible, since I cook basically everything from scratch here in Togo. Secondly we found out that David has developed asthma. He is now on regular doses of inhaled steroids and this has been a huge help to his health and overall energy level! I look forward to reading your blogs and catching up with what is going on with each of my blogging friends.

Glad you guys are back safe and getting re-settled to your routine. Sounds like you got some good information on Caleb, I’m so happy. Mom said she could really see a difference in him while you guys were there.
I’m not sure how likely it is that recipes on this site would be things that would be convenient for you to make, but I’m posting a link to a website and she cooks gluten-free. I stumbled on just for the crockpot cooking side of it since we don’t need the gluten-free, but maybe it could help you?

Glad to hear you’re home safe! Katie’s been on a gluten-free diet since she was three, and it was a big change at first, but now she’s so used to eating that way it’s second nature. She’s the best label-reader in the family! You’re right–when you cook from whole foods instead of processed, it’s not as big an adjustment.
I hope that Caleb and Dave see great results from the changes they’re making!

I’m so glad you got some things figured out with Dave and Caleb. Like the tip above, I know some of my gluten-free friends have found good websites with recipes and tips.

I was going to suggest the same crockpot cooking site — I was never able to use my crockpot on Togo electricity, but maybe you do…either way, many of her recipes could be converted to stovetop or oven. That is a major change in your cooking, I’m sure, but also a blessing that you cook from scratch and don’t have as many prepared products that you depend on already.
